This simple salad recipe by Peter Rowland Group Executive Chef Matthew Haigh is perfect for the holiday season and summer months.
Serves 4
Ingredients
1 punnet of heirloom tomatoes
1 red onion
120g watermelon
90g wild rocket
140g feta
45mls olive oil
25mls white balsamic
Sea salt
Cracked black pepper
Method
1/ Halve and quarter the tomatoes
2/ Thinly slice red onion
3/ Roughly cut watermelon into small pieces
4/ Mix ingredients in a bowl
5/ Add the wild rocket
6/ Crumble feta into the salad & slightly toss
7/ Mix olive oil and white balsamic together in a separate bowl
To serve
Place in a large bowl and drizzle with olive oil and balsamic dressing
Season with sea salt & cracked black pepper
Devour on a hot summer’s day!
